3 Super Easy Vegan Breakfasts

 


I don't know about you, but I go to bed every night looking forward to breakfast the next morning! Here's 3 of my go-to breakfasts, they're all healthy, delicious, and super easy to make! 

Avocado Toast 

Call me a typical millennial, but I LOVE avocado toast, it's yummy, nutritious, and it's a sure way to get my husband out of bed in the morning! 

ingredients:
toasted bread 
avocado (1 per slice of bread)
salt
garlic powder
coarse salt for sprinkling
pepper
extra virgin olive oil

Mash up the avocado with a fork, then mix in garlic powder and salt to taste (if you're not confidant about eyeballing the amounts, I'd start with about a 1/4 teaspoon of each and then go from there). Spread onto toasted bread, then sprinkle with a little coarse salt and add pepper to taste. Drizzle with olive oil and enjoy! 


Fruit Smoothie 

I make a smoothie pretty much every morning, and I've found that the key to a really thick, creamy smoothie with the perfect amount of sweetness is frozen bananas. I slice and freeze mine the night before, but you can also buy frozen banana slices. You can really experiment with adding any kind of fruit you like in this recipe, but the banana is a must for the base. 

ingredients:
1 frozen sliced banana
large handful frozen fruit of your choice (I usually use berries and/or peaches)
splash of non-dairy milk 
1-2 spoonfuls non-dairy yogurt

Add all ingredients to your blender and blend until smooth. 




Superfood Overnight Oats 

This recipe is great for when you want something healthy in a hurry. You put it together the night before and it's ready to go in the morning! You can use a lot of different ingredients in overnight oats, this is just a particularly nutritious variation that I love. 

ingredients:
rolled oats (1/2 cup per serving)
non-dairy milk (1/2 cup per serving) -I use oat milk 
frozen blueberries 
pure maple syrup
ground cinnamon
ground flaxseed 

Add equal parts oats and non-dairy milk to a jar or Tupperware with a lid. Stir to combine. Gently fold in frozen blueberries (I typically make 2 servings which would be 1 cup oats, 1 cup milk, and about a half cup of blueberries) Add a drizzle of maple syrup and a sprinkle of cinnamon, to taste. Add about a teaspoon flaxseed (you won't be able to taste it). Mix to combine and refrigerate overnight.
